Oh, spring, you flirty thing! I am so happy that warmer weather is here! Flowers are blooming and I am just dying to eat a million vegetables every day.
Tonight I threw together some of my favorite ingredients to create a veggie dinner that was totally delightful and filling, and loved by the whole family. Enjoy!
To create this yummy dinner, you will need (serves 4) 3 cups fresh french beans 1 cup feta cheese, crumbled 1 cup zima tomatoes 1 tablespoon olive oil generous sprinkling of garlic powder generous sprinkling of onion powder 1 cup quinoa, cooked
This is such a simple, delicious meal- perfect for those summer nights after baseball games and boat rides!
Sautee the french beans in the olive oil, garlic powder, and onion powder until almost tender, then add the tomatoes. Toss the mixture so the tomatoes become coated with the olive oil as well. Once the beans are tender and the tomatoes are warm, remove from heat.
Serve beans and tomatoes with 1/4c quinoa and sprinkle with 1/4c feta cheese.
Optional: Sprinkle with crushed red pepper or balsamic vinegar for a little *kick*
